I also suggest getting a weakaura to keep better track of stagger than the standard debuff-icon. Keep Ironskin Brew up, then Purify either directly after large hits, when your healer struggles, or to prevent capping brew charges (the latter won't happen in higher difficulty content, still technically true though).
Red stagger starts at 60% (that is "amount of damage staggered as percentage of your max HP"), which is nothing when a mythic raid boss is hitting you. In higher mythic+ and raiding you will pretty much live in red stagger at all times.
On a more serious note, "don't go into red stagger" is completely unactionable advice at the best of times. Nah man, you want your stagger as high as possible so High Tolerance and Training of Niuzao can do their thing. It seems optimal to me to try and keep your stagger as low as possible If you are living in green 100% of the time, you aren’t being as effective as a tank as you could be and could probably pull a few more mobs,

You gotta be darn good about stack maintenance if you are going to be routinely living in the red stagger range to be able to purify it and keep iron skin active.
